Cinnamon Crunch French Toast (Vegan)
Ingredients: 
  • 4 slices of thick-cut bread (like sourdough or Texas toast)
  • 1 cup unsweetened almond milk (or any plant-based milk)
  • 2 tablespoons flour
  • 1 tablespoon cornstarch
  • 1 tablespoon maple syrup or agave syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 1 cup cinnamon crunch cereal (check for vegan certification), crushed
  • Vegan butter or oil for frying
  • Maple syrup, for serving
  • Powdered sugar, for dusting (optional)
Recipe:
  1. In a shallow dish, whisk together almond milk, flour, cornstarch, maple syrup, vanilla extract, cinnamon, and salt until smooth.
  2. Place crushed cinnamon crunch cereal on a plate.
  3. Heat a skillet or griddle over medium heat and add a little vegan butter or oil.
  4. Dip each slice of bread into the almond milk mixture, coating both sides well, then press into the crushed cereal to coat.
  5. Place coated bread slices onto the skillet and cook until golden brown and crispy on each side, about 3-4 minutes per side.
  6. Remove from skillet and serve hot with maple syrup and a dusting of powdered sugar if desired.

Cinnamon Crunch French Toast (Non-Vegan)
Ingredients: 
  • 4 slices of thick-cut bread (like brioche or challah)
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 1 cup cinnamon crunch cereal (like Cinnamon Toast Crunch), crushed
  • Butter for frying
  • Maple syrup, for serving
  • Powdered sugar, for dusting (optional)

Recipe:
  1. In a shallow dish, whisk together eggs, milk, vanilla extract, cinnamon, and salt.
  2. Place crushed cinnamon crunch cereal on a plate.
  3. Heat a skillet or griddle over medium heat and add a knob of butter.
  4. Dip each slice of bread into the egg mixture, coating both sides well, then press into the crushed cereal to coat.
  5. Place coated bread slices onto the skillet and cook until golden brown and crispy on each side, about 3-4 minutes per side.
  6. Remove from skillet and serve hot with maple syrup and a dusting of powdered sugar if desired.
